Sustainable Nutrition
At Møller Institute, we have recently taken a step towards the implementation of alternative protein sources for clients during their visits. Novo Farina, is the brand of pea protein chosen by our chefs, it is being implemented within our food offering due to it’s sustainable and ethical manufacturing processes.
Novo Farina are a pioneering British manufacturer of plant-based protein alternatives and free from ingredients. They produce an innovative range of texturised vegetable protein, gluten free crumb and flour using 100% yellow peas.
Møller Institute Executive Chef, Alex Bigot, understands why Novo Farina has been our chosen pea protein provider, and the answer is simple – because the product is everything a sustainably driven chef could want!
Alex said “I don’t think processed or artificial meats with unethical production methods are acceptable for our clients. Knowing that Novo Farina’s food is made sustainably and locally is fantastic since we love to support local farmers. It’s also more nutrient-dense than other brands and sometimes even real meat itself!”
Novo Farina pride themselves with producing high protein ingredients, designed to deliver on taste, texture and versatility whilst being kinder on the planet. Their products are gluten free, high protein and fibre, vegan soya alterative products, for the substitution of meat – perfect for vegan, vegetarian, flexitarian, free-from and meat reduction diets. This is especially useful for when we host clients who require these types of alternatives.
Alex said, “The product comes as a foundation, which once again is perfect for our chefs, as we can develop the seasoning into whatever we require. The process is easy and not too timely.”
We look forward to our partnership and are eager to further explore the Novo Farina product range.
